MEXICAN STREET CORN

Absolutely! Here’s a classic Mexican Street Corn (Elote) recipe that’s easy and insanely tasty:


Mexican Street Corn (Elote) Recipe

Ingredients:

  • 4 ears of corn, husked

  • 1/4 cup mayonnaise

  • 1/4 cup Mexican crema or sour cream

  • 1/2 cup cotija cheese (crumbled) — or feta if you can’t find cotija

  • 1 teaspoon chili powder (adjust to taste)

  • 1 tablespoon fresh lime juice

  • Fresh cilantro (chopped, for garnish)

  • Lime wedges (for serving)

  • Salt to taste


Instructions:

  1. Grill the corn:
    Preheat your grill (or use a grill pan). Grill the corn over medium-high heat, turning every 2-3 minutes, until charred in spots and cooked through (about 8-10 minutes).

  2. Mix the sauce:
    In a bowl, combine mayonnaise, Mexican crema (or sour cream), lime juice, and a pinch of salt.

  3. Coat the corn:
    Once the corn is grilled, brush the mayo-crema mixture all over each ear of corn while it’s still warm.

  4. Add toppings:
    Sprinkle crumbled cotija cheese generously over the coated corn. Then dust with chili powder and garnish with chopped cilantro.

  5. Serve:
    Serve immediately with lime wedges on the side for squeezing.


Optional: Add a dash of smoked paprika for extra smoky flavor or some hot sauce if you want more heat.
