Here’s a recipe for Mexican Restaurant-Style Cheese Dip—a creamy, cheesy, and flavorful dip that’s perfect for serving with tortilla chips, tacos, or even as a topping for nachos!

Ingredients:

  • 2 cups shredded cheddar cheese (or a blend of cheddar and Monterey Jack)
  • 1 cup Velveeta cheese, cubed (for smooth, melty texture)
  • 1/2 cup whole milk (or heavy cream for extra richness)
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cumin (optional, for a little extra flavor)
  • 1 small can (4 oz) diced green chilies, drained (optional, for a mild heat)
  • 1 tablespoon pickled jalapeños, finely chopped (optional, for added spice)
  • Salt and pepper to taste

Instructions:

  1. Make the roux:
    • In a medium saucepan, melt the butter over medium heat.
    • Add the flour and cook for 1-2 minutes, stirring constantly, to form a smooth paste (roux). This will help thicken the dip.
  2. Add the milk:
    • Gradually add the milk (or cream) to the roux while whisking continuously to prevent lumps. Continue cooking for another 2-3 minutes until the mixture starts to thicken.
  3. Melt the cheese:
    • Lower the heat to medium-low and stir in the Velveeta cubes. Stir until the Velveeta has fully melted and the mixture becomes smooth and creamy.
    • Gradually add the shredded cheddar cheese (and Monterey Jack, if using), stirring constantly until the cheese is fully melted and the dip is smooth.
  4. Season the dip:
    • Stir in the garlic powder, onion powder, cumin, and salt and pepper to taste. If you’re using diced green chilies or pickled jalapeños, add them now, and stir until evenly distributed.
  5. Serve:
    • Once the cheese dip is smooth and creamy, remove it from the heat. Serve immediately with tortilla chips, warm tortillas, or as a topping for nachos, tacos, or burritos.

Tips:

  • For a smoother dip, you can use a cheese blend that melts well, like Monterey Jack or Oaxaca cheese.
  • If you like a spicier dip, add more jalapeños or even a bit of cayenne pepper.
  • This dip can be kept warm in a slow cooker or served in a heatproof dish to keep it melted.
