Here’s a fresh, tangy, and crunchy Mexican Cucumber Salad recipe that’s super easy to whip up and perfect for a light side or snack!


🥒 Mexican Cucumber Salad (Ensalada de Pepino)

Bright, refreshing, with a zesty kick of lime, chili, and a sprinkle of tangy cheese or herbs—this salad is crunchy and bursting with flavor!


🧾 Ingredients:

  • 2 large cucumbers, peeled and diced or sliced

  • 1 small red onion, thinly sliced

  • 1–2 fresh limes, juiced

  • 1 tsp chili powder (or Tajín seasoning)

  • ½ tsp ground cumin (optional)

  • ¼ cup fresh cilantro, chopped

  • Salt to taste

  • Optional toppings: crumbled cotija cheese, diced jalapeño, or sliced radishes


👩‍🍳 Instructions:

  1. In a large bowl, combine cucumbers and red onion.

  2. Sprinkle with salt and toss gently; let sit for 5 minutes to draw out moisture.

  3. Drain any excess liquid.

  4. Add lime juice, chili powder, cumin (if using), and chopped cilantro.

  5. Toss everything until well combined.

  6. Top with cotija cheese, jalapeños, or radishes if you like.

  7. Chill for 10–15 minutes before serving for best flavor.
