Here’s a bold and zesty Mexican Carne Asada Marinade recipe — perfect for tenderizing and flavoring flank or skirt steak with classic citrus, garlic, and spices. It brings that authentic grilled taste right to your kitchen!


🥩🌿 Mexican Carne Asada Marinade

Ingredients

  • ½ cup fresh lime juice (about 3–4 limes)

  • ¼ cup fresh orange juice (about 1 orange)

  • ¼ cup olive oil

  • 4 garlic cloves, minced

  • 1 jalapeño, seeded and finely chopped (optional for heat)

  • ¼ cup chopped fresh cilantro

  • 1 teaspoon ground cumin

  • 1 teaspoon dried oregano

  • 1 teaspoon chili powder

  • 1 teaspoon salt

  • ½ teaspoon black pepper


👩‍🍳 Instructions

  1. Mix all ingredients in a bowl until well combined.

  2. Place your steak (1.5 to 2 lbs flank or skirt steak) in a large resealable plastic bag or shallow dish.

  3. Pour marinade over the steak, making sure it’s well coated. Seal the bag or cover the dish.

  4. Marinate in the refrigerator for at least 2 hours, ideally 4–6 hours, or up to overnight for maximum flavor and tenderness.

  5. Remove steak from marinade and let it come to room temperature before grilling or broiling.

  6. Grill steak over high heat 3–5 minutes per side for medium-rare, depending on thickness.

  7. Let steak rest 5 minutes before slicing thinly against the grain.


📝 Tips:

  • For extra smoky flavor, add a teaspoon of smoked paprika or chipotle powder.

  • Serve with warm corn tortillas, pico de gallo, and guacamole for a full carne asada meal.

  • You can also use this marinade for chicken or pork.
