🌮 Mexican Cabbage Salad Recipe

🥗 Ingredients:

  • 4 cups green cabbage, finely shredded (you can mix with purple cabbage if desired)

  • 1 large carrot, grated

  • 1/2 red onion, thinly sliced

  • 1–2 jalapeños, finely diced (seeds removed for less heat)

  • 1/2 cup fresh cilantro, chopped

  • Juice of 2 limes

  • 2 tbsp apple cider vinegar or white vinegar

  • 2 tbsp olive oil (or avocado oil)

  • 1 tsp salt (adjust to taste)

  • 1/2 tsp black pepper

  • Optional add-ins: diced tomato, avocado chunks, corn, or crumbled queso fresco


🥄 Instructions:

  1. In a large bowl, combine the cabbage, carrot, onion, jalapeños, and cilantro.

  2. In a small bowl or jar, whisk together the lime juice, vinegar, olive oil, salt, and pepper.

  3. Pour the dressing over the cabbage mixture. Toss well to combine.

  4. Let it sit for at least 15 minutes to let the flavors meld (better after 1 hour).

  5. Taste and adjust seasoning if needed before serving.
