Mex casserole dish

Here’s a simple and delicious Mexican Casserole Dish recipe that’s easy to make and packed with flavor!


🌮 Mexican Casserole (Taco Bake Style)

📝 Ingredients:

  • 1 lb ground beef (or ground turkey)

  • 1 packet taco seasoning

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 can (15 oz) corn, drained

  • 1 can (10 oz) Rotel (diced tomatoes with green chilies), undrained

  • 1 cup salsa (your preferred heat level)

  • 2 cups shredded cheddar cheese (or Mexican blend)

  • 6 small flour or corn tortillas, cut into quarters or strips

  • Optional toppings: sour cream, avocado, green onions, jalapeños, cilantro


🔥 Instructions:

  1. Preheat oven to 375°F (190°C).

  2. Cook the meat: In a large skillet, brown ground beef over medium heat. Drain excess fat.

  3. Add flavor: Stir in taco seasoning, a splash of water (about 1/4 cup), and cook until thickened (2–3 minutes).

  4. Mix the filling: Add black beans, corn, Rotel, and salsa. Stir to combine and heat through.

  5. Layer the casserole:

    • In a greased 9×13” baking dish, layer half the tortillas on the bottom.

    • Add half the meat mixture.

    • Sprinkle with 1 cup of cheese.

    • Repeat layers (tortillas, meat, cheese).

  6. Bake for 20–25 minutes until bubbly and the cheese is melted.

  7. Top & serve: Let rest 5 minutes. Add toppings as desired.


💡 Tips:

  • Swap tortillas for crushed tortilla chips for a crunchier version.

  • Use leftover shredded chicken instead of beef for a twist.

  • Make it vegetarian by skipping the meat and adding more beans or sautéed veggies.
