Here’s a super simple and flavorful recipe for Melt-In-Your-Mouth Chicken—perfectly tender, juicy, and full of flavor!

Ingredients:

  • 4 boneless, skinless chicken breasts (or thighs if preferred)
  • 1/2 cup mayonnaise
  • 1/2 cup grated Parmesan cheese (preferably fresh)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions:

  1. Preheat Oven:
    Preheat your oven to 375°F (190°C).
  2. Prepare the Chicken:
    Place the chicken breasts on a baking sheet lined with parchment paper or a lightly greased baking dish.
  3. Make the Coating:
    In a small bowl, combine the mayonnaise, grated Parmesan, garlic powder, onion powder, paprika, salt, and pepper. Mix until smooth.
  4. Coat the Chicken:
    Spread the mayonnaise mixture generously over the top of each chicken breast, covering them completely. Make sure the coating is even.
  5. Bake:
    Bake the chicken in the preheated oven for about 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and is cooked through. The top should be golden brown and slightly crispy.
  6. Garnish and Serve:
    Remove the chicken from the oven, and let it rest for a few minutes before serving. Sprinkle with fresh parsley if desired.

Tips:

  • Substitute: You can substitute the mayonnaise with Greek yogurt for a lighter option, or add a little Dijon mustard for extra flavor.
  • Extra Flavor: For an extra layer of flavor, sprinkle some Italian seasoning or dried herbs like thyme or rosemary on top of the chicken before baking.
  • Sides: This chicken pairs wonderfully with roasted vegetables, mashed potatoes, or a side salad.
