Melt in Your Mouth Chicken

Posted on April 24, 2025
Melt in Your Mouth Chicken is a super easy, creamy, tender baked chicken recipe that’s perfect for a weeknight dinner or cozy comfort food craving. The magic is in the topping — a tangy, seasoned mayo-parmesan mix that keeps the chicken juicy and flavorful. Here’s how to make it:

Melt in Your Mouth Chicken Recipe

Ingredients:

  • 4 boneless, skinless chicken breasts

  • 1 cup mayonnaise (or plain Greek yogurt for a lighter option)

  • ½ cup freshly grated Parmesan cheese

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp salt (adjust to taste)

  • ½ tsp black pepper

  • Optional: paprika or Italian seasoning for extra flavor

Instructions:

  1. Preheat Oven: Set to 375°F (190°C).

  2. Prepare Chicken: Pat chicken breasts dry with a paper towel and place in a baking dish.

  3. Mix Topping: In a bowl, combine mayonnaise, Parmesan cheese, garlic powder, onion powder, salt, and pepper.

  4. Coat Chicken: Spread the mayo mixture evenly over each chicken breast.

  5. Bake: Bake uncovered for 25–30 minutes, or until chicken reaches an internal temp of 165°F and is golden on top. You can broil it for an extra 2–3 minutes to brown the top.

  6. Rest & Serve: Let it rest for 5 minutes before serving.

Tips:

  • Thin chicken breasts or cutlets work best for even cooking.

  • Add breadcrumbs on top before baking if you like a little crunch.

  • Serve with roasted veggies, mashed potatoes, or rice.
