Mediterranean Spinach and Feta Crisps are a savory, light snack that’s full of flavor and perfect for a quick appetizer or party dish. These crispy bites are packed with fresh spinach, tangy feta cheese, and Mediterranean herbs, offering a delicious twist on traditional crisps.

Ingredients:

  • 1 cup fresh spinach, chopped (about 2 handfuls)
  • 1/2 cup crumbled feta cheese
  • 1/2 cup shredded mozzarella cheese (for meltiness and texture)
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon dried oregano (or fresh if available)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 sheet of puff pastry (store-bought or homemade)
  • Optional: Fresh herbs (like parsley or basil) for garnish

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.

2. Prepare the Filling:

  • In a medium bowl, combine the chopped spinach, crumbled feta cheese, shredded mozzarella, Parmesan cheese, garlic powder, onion powder, oregano, and olive oil. Season with salt and pepper to taste. Mix everything together until well combined.

3. Prepare the Puff Pastry:

  • Roll out the puff pastry sheet on a lightly floured surface. You can use a rolling pin to slightly stretch it, but make sure it doesn’t become too thin.
  • Using a knife or pizza cutter, cut the puff pastry into small squares or rectangles, depending on the size of the crisps you want.

4. Assemble the Crisps:

  • Place a small spoonful of the spinach and feta mixture in the center of each puff pastry square. Fold the corners of the pastry over the filling, forming a little bundle or triangle. Press gently on the edges to seal.
  • Alternatively, you can leave the edges open for a more rustic look, simply folding the pastry into a smaller square around the filling.

5. Bake the Crisps:

  • Place the prepared crisps onto the baking sheet, leaving a little space between each one.
  • Brush the tops of the pastry with a little extra olive oil or melted butter for added crispiness and color.
  • Bake for 15-20 minutes, or until the puff pastry is golden brown and crisp, and the cheese filling is melted.

6. Garnish and Serve:

  • Once out of the oven, let the Mediterranean spinach and feta crisps cool for a few minutes before serving.
  • Optionally, garnish with fresh herbs like parsley or basil for a pop of color and added freshness.

Tips:

  • For a lighter version, you can use phyllo dough instead of puff pastry, though the texture will be different.
  • Feel free to add extra Mediterranean ingredients like olives, sun-dried tomatoes, or pine nuts to the filling for more flavor.
  • These crisps can also be made ahead of time and stored in an airtight container for a couple of days, or frozen for longer storage.
