Mediterranean Quick n Easy Zuppa Toscana Soup RECIPE

Here’s a Mediterranean-inspired twist on the classic Zuppa Toscana! This version is light yet full of flavor, with some Mediterranean touches like olives, sun-dried tomatoes, and fresh herbs.

Mediterranean Quick ‘n’ Easy Zuppa Toscana Soup

Ingredients:

  • 1 lb Italian sausage (or turkey sausage for a leaner option)
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 4 cups low-sodium chicken broth
  • 2 cups water
  • 2 large potatoes, thinly sliced (you can leave the skin on for extra texture)
  • 1 cup baby spinach (or kale for a more traditional touch)
  • 1/2 cup sun-dried tomatoes, chopped (use the oil-packed variety for extra flavor)
  • 1/4 cup Kalamata olives, chopped
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon crushed red pepper flakes (optional for heat)
  • 1/4 cup fresh basil or parsley, chopped (for garnish)
  • Salt and pepper, to taste
  • 1 cup half-and-half or milk (optional, for a creamier soup)

Instructions:

  1. Cook the Sausage: In a large pot, heat a bit of olive oil over medium heat. Add the sausage and cook, breaking it up with a spoon, until browned and cooked through (about 5-7 minutes). Remove excess fat if needed.
  2. Sauté the Veggies: Add the diced onion and garlic to the pot with the sausage. Sauté for 2-3 minutes until the onions soften and become translucent.
  3. Add the Broth & Potatoes: Pour in the chicken broth and water, stirring to combine. Add the sliced potatoes, sun-dried tomatoes, Kalamata olives, oregano, thyme, and crushed red pepper flakes. Bring to a boil, then reduce the heat and simmer for about 15-20 minutes, or until the potatoes are tender.
  4. Add Greens & Cream: Once the potatoes are tender, stir in the spinach (or kale), and let it wilt into the soup. If you want a creamier texture, add in the half-and-half or milk. Stir to combine and let it heat through.
  5. Season & Garnish: Taste and season with salt and pepper to your liking. Ladle the soup into bowls, and garnish with fresh basil or parsley.
  6. Serve: Serve hot with some crusty bread on the side for dipping. Enjoy your Mediterranean-inspired Zuppa Toscana!

This version has the rich, hearty qualities of the classic soup but with those lovely Mediterranean ingredients that really brighten it up. Perfect for a quick, satisfying meal!
