Here’s a comforting and delicious recipe for Meatloaf with Tomato Beef Sauce — classic meatloaf served smothered in a savory tomato-based beef sauce that adds rich flavor and moisture.


🍖 Meatloaf with Tomato Beef Sauce

Ingredients

For the Meatloaf:

  • 1½ lbs ground beef (80/20 blend)

  • ½ cup breadcrumbs

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 egg

  • ½ cup milk

  • 2 tablespoons Worcestershire sauce

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon dried Italian herbs or oregano

For the Tomato Beef Sauce:

  • 1 tablespoon olive oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • ½ lb ground beef

  • 1 (14 oz) can crushed tomatoes

  • 1 tablespoon tomato paste

  • 1 teaspoon dried basil

  • 1 teaspoon dried oregano

  • Salt and pepper, to taste

  • 1 teaspoon sugar (optional, to balance acidity)


👩‍🍳 Instructions

1. Prepare the Meatloaf:

  • Preheat oven to 350°F (175°C).

  • In a large bowl, mix ground beef, breadcrumbs, onion, garlic, egg, milk, Worcestershire sauce, salt, pepper, and herbs until just combined.

  • Shape into a loaf and place in a greased loaf pan or on a baking sheet.

  • Bake for 50–60 minutes, or until cooked through (internal temp 160°F/71°C).

2. Make the Tomato Beef Sauce:

  • While meatloaf bakes, heat olive oil in a skillet over medium heat.

  • Sauté onion and garlic until softened.

  • Add ground beef and cook until browned, breaking it up as it cooks.

  • Stir in crushed tomatoes, tomato paste, basil, oregano, salt, pepper, and sugar if using.

  • Simmer for 15–20 minutes, stirring occasionally.

3. Serve:

  • Slice the meatloaf and pour the tomato beef sauce over each serving.

  • Pair with mashed potatoes, rice, or roasted vegetables.


📝 Tips:

  • For extra moisture, soak breadcrumbs in milk before mixing.

  • You can spoon some sauce over the meatloaf before baking for extra flavor.

  • Leftover sauce freezes well for future use.
