Mayo & Parmesan Chicken

Posted on September 1, 2025
Here’s a simple, juicy, and flavorful Mayo & Parmesan Chicken recipe — a classic, low-carb favorite that’s great for quick weeknight dinners and also fits keto or gluten-free diets.

🍗 Mayo & Parmesan Crusted Chicken

🧂 Ingredients:

  • 4 boneless, skinless chicken breasts (or thighs)

  • ½ cup mayonnaise

  • ½ cup grated Parmesan cheese (fresh or canned)

  • 1 tsp garlic powder

  • ½ tsp paprika (optional for color)

  • Salt & pepper to taste

  • Optional: chopped parsley for garnish

🔥 Instructions:

1. Preheat oven

  • Preheat to 200°C (400°F).

  • Line a baking tray with parchment or lightly grease a baking dish.

2. Mix topping

In a bowl, stir together:

  • Mayonnaise

  • Parmesan

  • Garlic powder

  • Paprika (if using)

  • A pinch of salt and pepper

3. Prep chicken

  • Pat chicken dry with paper towels.

  • Place chicken breasts in the baking dish.

  • Spoon the mayo-Parmesan mixture evenly over the top of each piece.

4. Bake

  • Bake uncovered for 25–30 minutes, or until the internal temp hits 75°C (165°F) and the topping is golden and bubbly.

  • Optional: Broil for the last 2–3 minutes to brown the top.

5. Garnish & serve

  • Sprinkle with fresh parsley or extra Parmesan.

  • Serve with roasted veggies, a green salad, or cauliflower mash for a keto-friendly meal.

💡 Tips & Variations:

  • Add crunch: Mix a few crushed pork rinds or almond flour into the topping.

  • Spicy twist: Add a dash of hot sauce or cayenne to the mayo mix.

  • Use thighs: Works perfectly with boneless skinless chicken thighs (juicier!).
