Mashed Potato Puffs are a fun and delicious way to enjoy mashed potatoes! They’re crispy on the outside and fluffy on the inside, making them a perfect side dish or appetizer. Here’s a simple recipe for you:

Ingredients:

  • 2 cups mashed potatoes (leftover mashed potatoes work great!)

  • 1/2 cup grated cheese (cheddar, Parmesan, or your favorite cheese)

  • 1/4 cup sour cream (optional, for extra creaminess)

  • 1 large egg

  • 1/4 cup breadcrumbs (panko or regular)

  • 2 tablespoons chopped fresh chives (optional, for garnish)

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • Salt and pepper to taste

  • Olive oil or butter for greasing

Instructions:

  1. Preheat the oven to 400°F (200°C). Grease a muffin tin or line it with parchment paper for easy removal.

  2. Prepare the mashed potatoes: If you’re using leftovers, make sure they’re smooth and free from lumps. If they’re too thick, you can thin them out with a little bit of milk or cream until they’re creamy but not too runny.

  3. Mix the ingredients: In a large bowl, combine the mashed potatoes, grated cheese, sour cream (if using), egg, breadcrumbs, garlic powder, onion powder, salt, and pepper. Mix everything until fully combined. The mixture should be thick but easily spoonable.

  4. Spoon the mixture into the muffin tin: Use an ice cream scoop or a spoon to fill each muffin cup with the mashed potato mixture. Press them down gently to ensure they hold their shape.

  5. Top with breadcrumbs: If you want extra crispiness, sprinkle a little extra breadcrumbs on top of each puff.

  6. Bake: Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the tops are golden brown and slightly crispy.

  7. Cool slightly and serve: Let the mashed potato puffs cool for a few minutes before removing them from the tin. Garnish with fresh chives or parsley if desired.

Tips:

  • Cheese options: Try adding mozzarella for a gooey inside, or go for something stronger like cheddar or Gruyère for more flavor.

  • Make them mini: You can make these in a mini muffin tin for bite-sized puffs, perfect for appetizers or snacks!

  • Variation: Add crispy bacon bits, caramelized onions, or even some sautéed spinach to the mixture for extra flavor.
