Here’s a refreshing and super easy recipe for Marinated Cucumbers, Onions, and Tomatoes — a Southern-style summer side dish that’s crisp, tangy, and perfect alongside grilled meats, sandwiches, or even on its own!


🥒🍅 Marinated Cucumbers, Onions, and Tomatoes

Ingredients:

  • 2 large cucumbers, sliced thin (peeling optional)

  • 3–4 ripe tomatoes, cut into wedges or thick slices

  • 1 medium red or sweet onion, thinly sliced

  • ½ cup apple cider vinegar (or white vinegar)

  • ¼ cup water

  • 2–3 tbsp granulated sugar (adjust to taste)

  • 1½ tsp salt

  • ½ tsp black pepper

  • 2 tbsp olive oil

  • Optional: ½ tsp dried dill, basil, or Italian seasoning

  • Optional: 1–2 cloves garlic, minced


🧑‍🍳 Instructions:

1. Prepare the Vegetables:

  • Slice cucumbers and onions thinly.

  • Cut tomatoes into wedges or thick rounds.

  • Place all vegetables in a large bowl.

2. Make the Marinade:

  • In a small bowl or jar, whisk together:

    • Vinegar

    • Water

    • Sugar

    • Salt & pepper

    • Olive oil

    • Herbs/spices if using

3. Combine & Marinate:

  • Pour the marinade over the vegetables.

  • Toss gently to coat everything well.

  • Cover and refrigerate for at least 2 hours, preferably overnight for full flavor.

4. Serve:

  • Give it a stir before serving.

  • Serve chilled or at room temp.


💡 Tips & Variations:

  • Longer marinating = more flavor (lasts up to 5 days in the fridge).

  • Add sliced bell peppers, banana peppers, or even avocado (right before serving).

  • Try balsamic vinegar for a different twist.

  • Sprinkle with feta or crumbled goat cheese for extra tang.
