Here’s a refreshing, tangy, and easy recipe for Marinated Cucumbers, Onions, and Tomatoes — perfect as a summer side dish or salad!


🥒 Marinated Cucumbers, Onions, and Tomatoes

Ingredients:

  • 2 medium cucumbers, thinly sliced (peeled or unpeeled)

  • 1 pint cherry tomatoes (halved) or 2 large tomatoes (cut into wedges)

  • 1 small red onion, thinly sliced

  • ¼ cup white vinegar or apple cider vinegar

  • ¼ cup water

  • 2 tbsp olive oil

  • 1–2 tsp sugar (to taste)

  • ½ tsp salt

  • ¼ tsp black pepper

  • Optional: 1 clove garlic (minced), fresh herbs (like dill, parsley, or basil)


Instructions:

  1. Prep the Veggies

    • Slice cucumbers and onions thinly.

    • Cut tomatoes into wedges or halve cherry tomatoes.

  2. Make the Marinade

    • In a bowl or jar, whisk together: vinegar, water, olive oil, sugar, salt, pepper, and garlic (if using).

  3. Combine and Marinate

    • In a large bowl, combine cucumbers, onions, and tomatoes.

    • Pour the marinade over the top and toss to coat evenly.

  4. Chill

    • Cover and refrigerate for at least 1 hour, preferably 2–4 hours for the best flavor. Stir occasionally to redistribute the marinade.

  5. Serve

    • Garnish with fresh herbs before serving.

    • Serve cold as a side dish, over greens, or alongside grilled meats.


💡 Tips:

  • For extra crunch, use English or Persian cucumbers.

  • Add a kick with a pinch of red pepper flakes.

  • Make it Southern-style by using more sugar and cider vinegar.
