2 cups cucumbers, thinly sliced (peeled or unpeeled)

2 cups tomatoes, chopped or sliced into wedges (use cherry/grape tomatoes or heirlooms for variety)

1 small red onion, thinly sliced

1/4 cup white vinegar (or apple cider vinegar for a sweeter note)

2 tbsp olive oil

1 tsp sugar (optional, helps mellow the vinegar)

Salt & black pepper, to taste

1/4 tsp dried oregano or Italian seasoning (optional)

Fresh herbs (optional): chopped parsley, dill, or basil

Prep the vegetables:
Slice cucumbers, tomatoes, and onion. Place them in a large bowl. -
Make the marinade:
In a small bowl, whisk together vinegar, olive oil, sugar, salt, pepper, and herbs. -
Combine & chill:
Pour the marinade over the vegetables and toss gently to coat everything evenly. -
Marinate:
Cover and refrigerate for at least 30 minutes to 2 hours. The longer it sits, the more flavorful it gets! -
Serve:
Toss again before serving. Garnish with fresh herbs if desired.
