📝 Ingredients:
For the meatloaf:

2 lbs ground beef (80/20 is ideal)

1 small onion, finely chopped

1/2 green bell pepper, finely chopped (optional)

2 cloves garlic, minced

2 large eggs

1 cup milk
-
1 cup plain breadcrumbs or crushed saltine crackers

2 tbsp Worcestershire sauce

1 tbsp ketchup or mustard (optional, for added flavor)

1 tsp salt

1/2 tsp black pepper

1/2 tsp dried thyme or Italian seasoning (optional)
For the glaze:

1/2 cup ketchup

2 tbsp brown sugar
-
1 tbsp yellow mustard or apple cider vinegar (for tang)

Preheat Oven:

Set to 350°F (175°C).

Mix Meatloaf:

In a large bowl, combine all meatloaf ingredients. Mix gently with hands or a spoon until just combined—don’t overmix.

Shape:

Transfer mixture to a greased baking dish or sheet pan.

Shape into a loaf (about 8×4 inches). Don’t pack it too tightly—looser is juicier!

Make the Glaze:

In a small bowl, mix ketchup, brown sugar, and mustard or vinegar.

Top and Bake:

Spread half of the glaze on top of the loaf.

Bake for 50–60 minutes, then top with remaining glaze and bake another 10–15 minutes.

Internal temp should be 160°F (71°C).

Let rest for 10 minutes before slicing. This helps keep it juicy.
