Mosaic Jelly is a fun, colorful, and visually striking dessert that’s perfect for any occasion! It’s made by combining different colors of gelatin to create a “mosaic” effect. You can serve it as a refreshing treat or a festive dessert for a party. Here’s a simple and vibrant recipe for making mosaic jelly!

Mosaic Jelly Recipe

Ingredients:

  • 4 different flavored jelly (gelatin) packets (e.g., strawberry, lime, orange, and blueberry or any color/flavor you like)
  • 2 cups sweetened condensed milk (for the creamy layer)
  • 2 cups water
  • 1 1/2 cups cold water
  • 1 packet unflavored gelatin (about 1 tbsp)
  • 1/2 cup sugar (optional, if you like your creamy layer a little sweeter)

Instructions:

Step 1: Prepare the Colorful Jelly Layers

  1. Make Each Gelatin: Start by preparing each of the colored gelatin flavors separately.
    • In 4 separate bowls, dissolve each flavored gelatin packet in 1 cup of boiling water, following the package instructions.
    • Stir each mixture well to dissolve the gelatin completely.
    • Let each bowl cool to room temperature, then place them in the refrigerator to set for at least 3-4 hours or until firm.

Step 2: Cut the Jelly into Cubes

  1. Once the flavored jelly has set, cut it into small cubes. You can use a knife or just use your hands to break the jelly into pieces.
    • Set the cubes aside in a large mixing bowl. Try to mix different colors for a mosaic effect.

Step 3: Prepare the Creamy Layer

  1. To make the creamy layer, dissolve the unflavored gelatin in 1/2 cup of cold water and let it bloom for 5-10 minutes (it will absorb the water and swell up).
  2. In a small saucepan, heat the sweetened condensed milk and the 1 1/2 cups of boiling water. Stir in the sugar (if using) until dissolved.
  3. Once the milk mixture is warm, add the bloomed gelatin to it. Stir until fully dissolved.
  4. Let the creamy mixture cool slightly to room temperature, but don’t let it set.

Step 4: Assemble the Mosaic

  1. In a large, deep serving dish or a glass bowl, add the cubed colorful gelatin pieces. Spread them out evenly.
  2. Pour the slightly cooled creamy gelatin mixture over the colorful cubes, ensuring it covers them evenly.
    • If you want the cream to separate slightly from the colored jelly, you can let it cool a little more before pouring.
  3. Return the assembled mosaic jelly to the refrigerator and let it set for at least 4 hours or overnight. This will allow the creamy layer to firm up and integrate with the colored cubes.

Step 5: Serve

  1. Once set, cut the mosaic jelly into cubes or scoop it out with a spoon. It should have a beautiful, colorful mosaic pattern with the creamy layer holding everything together.

Tips:

  • Get creative with colors: Feel free to use more than four colors of gelatin, depending on your preference or what you have on hand.
  • For a smoother, more unified creamy layer: If you prefer a smoother consistency, you can substitute sweetened condensed milk with coconut milk for a more tropical flavor.
  • Presentation: To make it look extra special, you can layer the jelly in clear glass cups or jars for individual servings.
