Ingredients:

  • For the Beef:
    • 1 lb (450g) beef sirloin or ribeye, thinly sliced into strips
    • 2 tbsp olive oil
    • Salt and pepper, to taste
    • 1 tsp dried oregano or Italian seasoning (optional)
  • For the Creamy Garlic Sauce:
    • 3 tbsp butter
    • 6 cloves garlic, minced (or more for extra flavor)
    • 1 cup heavy cream (or half-and-half for a lighter version)
    • 1/2 cup grated Parmesan cheese (freshly grated is best)
    • 1/2 cup chicken broth or beef broth
    • 1/2 tsp dried thyme or Italian seasoning
    • 1/4 tsp ground nutmeg (optional, adds warmth to the sauce)
    • Salt and pepper, to taste
    • Fresh parsley, chopped (for garnish)
  • For the Pasta:
    • 12 oz (340g) pasta (fettuccine, pappardelle, or tagliatelle works great)
    • Salt, for pasta water

Instructions:

1. Cook the Pasta:

  • Bring a large pot of salted water to a boil.
  • Cook the pasta according to package instructions, typically around 8-10 minutes for al dente.
  • Reserve 1 cup of pasta cooking water, then drain the pasta and set it aside.

2. Sear the Beef:

  • While the pasta cooks, heat the olive oil in a large skillet over medium-high heat.
  • Season the beef strips with salt, pepper, and oregano (if using).
  • Add the beef to the skillet in a single layer and cook for about 2-3 minutes per side, until the beef is browned and cooked through. Remove the beef from the skillet and set it aside.

3. Make the Creamy Garlic Sauce:

  • In the same skillet, reduce the heat to medium and add the butter.
  • Once the butter has melted, add the minced garlic and sauté for 1-2 minutes, until fragrant, being careful not to burn the garlic.
  • Add the chicken broth (or beef broth) and let it simmer for 2-3 minutes, allowing the flavors to meld together.
  • Stir in the heavy cream, Parmesan cheese, thyme, and nutmeg (if using), and cook for 4-5 minutes, stirring occasionally, until the sauce thickens slightly.
  • Taste the sauce and adjust the seasoning with salt and pepper as needed.

4. Combine the Pasta and Beef:

  • Add the cooked pasta to the skillet, tossing it in the creamy garlic sauce until well coated. If the sauce is too thick, add a little reserved pasta water to loosen it up and make the sauce silkier.
  • Stir in the seared beef strips, allowing everything to heat through and combine.

5. Serve:

  • Divide the pasta among serving plates and garnish with freshly chopped parsley and additional grated Parmesan cheese, if desired.

Tips:

  • Add Vegetables: You can add spinach, mushrooms, or sun-dried tomatoes to the sauce for more texture and flavor.
  • Richness: For an even richer sauce, you can use mascarpone or cream cheese in place of some of the heavy cream.
  • Make it Spicy: If you like a bit of heat, add a pinch of red pepper flakes to the garlic sauce.
