Ah, the beloved Lunchroom Ladies Brownies! These brownies are a nostalgic treat, usually rich, chewy, and not overly sweet. Here’s a recipe that’s close to the classic ones served in school cafeterias:

Lunchroom Ladies Brownies Recipe

Ingredients:

  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp salt
  • 1/2 tsp baking powder

Instructions:

  1. Preheat the oven: Set it to 350°F (175°C) and grease a 9×13-inch baking pan, or line it with parchment paper for easier cleanup.
  2. Mix wet ingredients: In a large bowl, combine the melted butter and sugar. Stir until well combined. Then add in the eggs, one at a time, and the vanilla extract. Mix everything until smooth.
  3. Add dry ingredients: In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder. Slowly add this dry mixture into the wet ingredients and stir until just combined. Be careful not to overmix.
  4. Bake the brownies: Pour the batter into the prepared baking pan, spreading it evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs (not wet batter).
  5. Cool and serve: Let the brownies cool completely in the pan before cutting them into squares. This helps them set and makes them easier to slice.
