Absolutely! These Loaded Cheesy Pocket Tacos are crispy, melty, flavor-packed, and totally customizable — think of them like taco Hot Pockets or folded quesadilla tacos. Great for weeknights, parties, or meal prep!


🌮 Loaded Cheesy Pocket Tacos

Servings: 8 pockets

Prep Time: 15 minutes

Cook Time: 20 minutes


Ingredients:

Taco Filling:

  • 1 lb ground beef or ground turkey

  • 1 packet taco seasoning (or 2 tbsp homemade)

  • ½ cup water

  • 1 cup shredded cheddar or Mexican blend cheese

  • ½ cup cream cheese or sour cream (for extra creaminess)

  • ½ cup canned black beans or refried beans (optional)

  • ½ cup corn (optional)

Pocket Assembly:

  • 8 large flour tortillas (soft taco or burrito-size)

  • 1 ½ cups shredded cheese (for layering)

  • Cooking spray or a bit of oil (for crisping)

Optional Toppings (for serving):

  • Shredded lettuce

  • Diced tomatoes

  • Jalapeños

  • Salsa or taco sauce

  • Sour cream

  • Guacamole


Instructions:

1. Cook the Filling:

  • In a skillet over medium heat, cook ground beef until browned.

  • Drain any excess fat.

  • Stir in taco seasoning and ½ cup water; simmer until thickened.

  • Reduce heat and stir in cream cheese (or sour cream), shredded cheese, and optional beans/corn.

  • Mix until smooth and creamy. Set aside.


2. Assemble the Pockets:

  • Lay out a tortilla and spoon about ¼ cup of filling in the center.

  • Top with a little extra shredded cheese.

  • Fold sides in, then fold bottom up and roll into a sealed rectangular pocket (like a burrito but tighter and flatter).

  • Repeat with remaining tortillas and filling.


3. Crisp the Pockets:

  • Heat a large skillet or griddle over medium heat and spray with cooking spray or brush lightly with oil.

  • Cook each pocket seam-side down first for 2–3 minutes per side, until golden brown and crispy.

  • Alternatively, bake at 400°F (200°C) for 10–15 minutes, flipping halfway, or air fry at 375°F for 6–8 minutes until crispy.


4. Serve:

  • Slice in half or serve whole with your favorite taco toppings and dips.


📝 Tips & Variations:

  • Add hot sauce or chopped jalapeños inside for a spicy kick.

  • Use shredded rotisserie chicken or pulled pork instead of beef.

  • Want it vegetarian? Skip the meat and load up with beans, peppers, onions, and mushrooms.

  • Great for freezing: Wrap cooled pockets in foil and freeze. Reheat in oven or air fryer.
