Ingredients:

For the Salmon:

  • 4 salmon fillets (skin on or off, depending on your preference)

  • 2 tablespoons olive oil

  • Salt and pepper (to taste)

  • 1 tablespoon lemon juice

  • Zest of 1 lemon

  • 2 cloves garlic (minced)

  • 3 tablespoons unsalted butter (melted)

  • 1 teaspoon fresh parsley (chopped, for garnish)

  • 1 tablespoon fresh dill (optional, for garnish)

For the Roasted Potatoes:

  • 4-5 medium potatoes (Yukon Gold or baby potatoes, cut into chunks)

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon dried rosemary (or fresh if available)

  • Salt and pepper (to taste)

For the Broccoli:

  • 1 large head of broccoli (cut into florets)

  • 1 tablespoon olive oil

  • 1/2 teaspoon lemon zest (optional)

  • Salt and pepper (to taste)

  • 1 clove garlic (optional, minced for extra flavor)


Instructions:

1. Prepare the Roasted Potatoes:

  1. Preheat your oven to 400°F (200°C).

  2. Wash and cut the potatoes into bite-sized chunks. Place them on a baking sheet.

  3. Drizzle with 2 tablespoons olive oil, then sprinkle with garlic powder, rosemary, and salt and pepper.

  4. Toss the potatoes to coat evenly, then spread them out in a single layer on the baking sheet.

  5. Roast the potatoes in the preheated oven for 25-30 minutes, flipping halfway through until they are golden brown and crispy on the outside.

2. Prepare the Broccoli:

  1. While the potatoes are roasting, prep the broccoli by cutting it into florets.

  2. Drizzle with 1 tablespoon olive oil and season with salt, pepper, and optional garlic.

  3. Place the broccoli on another baking sheet (or add it to the same sheet during the last 15 minutes of roasting the potatoes).

  4. Roast the broccoli for 15-20 minutes, or until it’s tender and slightly crispy on the edges. If you like a little citrusy flavor, sprinkle some lemon zest over the broccoli before serving.

3. Prepare the Salmon:

  1. While the potatoes and broccoli are roasting, prep the salmon. Pat the salmon fillets dry with a paper towel to remove excess moisture.

  2. Drizzle 2 tablespoons olive oil over the salmon fillets, then season with salt and pepper to taste.

  3. In a small bowl, combine the melted butter, lemon juice, lemon zest, and minced garlic. Stir well to combine.

  4. Preheat a large skillet over medium-high heat. Once hot, add the salmon fillets, skin side down (if using skin-on). Sear for 3-4 minutes until the skin gets crispy.

  5. Flip the salmon and pour the lemon butter mixture over the top. Continue cooking for an additional 3-4 minutes, or until the salmon is cooked through and flakes easily with a fork.

4. Assemble the Meal:

  1. Once everything is cooked, place the roasted potatoes, broccoli, and salmon fillets on a plate or serving dish.

  2. Drizzle any remaining lemon butter sauce from the pan over the salmon for extra flavor.

  3. Garnish the salmon with freshly chopped parsley and dill for a pop of color and freshness.


Tips for the Perfect Meal:

  • Salmon doneness: The key to perfectly cooked salmon is not to overcook it. The salmon should be cooked until it easily flakes with a fork but still retains a juicy texture inside. If you prefer, use a thermometer to check for an internal temperature of 145°F (63°C).
