Here’s a cozy, comforting recipe for Lasagna Soup β€” all the flavors of classic lasagna, but in a hearty, easy-to-make soup form!


🍲 Lasagna Soup

⏱️ Time: About 45 minutes


πŸ§‚ Ingredients:

  • 1 lb ground beef (or Italian sausage)

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 1 (28 oz) can crushed tomatoes

  • 4 cups beef or chicken broth

  • 1 tbsp tomato paste

  • 1 tsp dried basil

  • 1 tsp dried oregano

  • 1/2 tsp red pepper flakes (optional)

  • Salt & pepper, to taste

  • 6 oz no-boil lasagna noodles, broken into bite-sized pieces

  • 1 cup ricotta cheese

  • 1 cup shredded mozzarella cheese

  • 1/4 cup grated Parmesan cheese

  • Fresh basil or parsley for garnish

  1. Brown the meat

    • In a large pot, cook ground beef and onion over medium heat until browned and onion is softened.

    • Drain excess fat.

  2. Add garlic & tomato paste

    • Stir in garlic and tomato paste; cook for 1 minute until fragrant.

  3. Add liquids & seasoning

    • Add crushed tomatoes, broth, basil, oregano, red pepper flakes, salt, and pepper.

    • Bring to a simmer.

  4. Cook noodles

    • Add broken lasagna noodles to the pot.

    • Simmer until noodles are tender, about 10–12 minutes, stirring occasionally.

  5. Serve

    • Ladle soup into bowls.

    • Top each serving with a dollop of ricotta, shredded mozzarella, Parmesan, and fresh herbs.

  • Use Italian sausage for extra flavor.

  • Swap noodles for gluten-free pasta if needed.

  • Add chopped spinach or kale for extra greens.

  • Leftovers taste great reheated β€” add a splash of broth if it thickens too much.
