๐Ÿง€ Lake Day Dip (a.k.a. Cheesy Corn & Rotel Dip)

๐Ÿง‚ Ingredients:

  • 1 can (11 oz) sweet corn, drained

  • 1 can (10 oz) Rotel tomatoes with green chilies, drained

  • 1 cup shredded cheddar cheese

  • 1/2 cup shredded pepper jack cheese (optional for spice)

  • 1 cup sour cream

  • 1/2 cup mayonnaise

  • 1/4 cup chopped green onions

  • 1/4 tsp garlic powder

  • 1/4 tsp black pepper

  • 1/4 tsp chili powder (optional)

  1. In a large bowl, combine sour cream, mayo, and seasonings.

  2. Fold in corn, Rotel, cheeses, and green onions.

  3. Stir until evenly combined.

  4. Cover and chill for at least 1 hour (optional but improves flavor).

  5. Serve cold or at room temp with tortilla chips, Fritos, or sliced veggies.
