Korvstroganoff med potatismos is a classic Swedish comfort food! It’s a simple, hearty dish featuring sausage (typically Swedish “korv”) in a creamy, tangy sauce, served with mashed potatoes (potatismos). It’s fast to make and super satisfying. Here’s a traditional recipe for Korvstroganoff med Potatismos:

Korvstroganoff

Ingredients:

  • 400g (14 oz) Swedish sausage (or any sausage you prefer, like kielbasa or bratwurst)

  • 1 medium onion, finely chopped

  • 1 tablespoon butter or oil for frying

  • 2 tablespoons tomato purée (or ketchup)

  • 1 cup heavy cream (or a mix of cream and milk if you want it lighter)

  • 1/2 cup water (or broth, for a richer flavor)

  • 1 teaspoon paprika (sweet paprika or smoked paprika, depending on your taste)

  • 1 tablespoon Dijon mustard (optional, for tang)

  • Salt and pepper (to taste)

  • Chopped parsley (optional, for garnish)

Instructions:

  1. Prepare the Sausage:
    Slice the sausages into thin rounds or bite-sized pieces. If you’re using Swedish korv (like falukorv), it’s often already cooked, so just slice it and you’re good to go.

  2. Sauté the Onions:
    In a large skillet, heat the butter or oil over medium heat. Add the chopped onion and sauté until soft and golden, about 3-4 minutes.

  3. Cook the Sausage:
    Add the sliced sausage to the skillet with the onions and cook for 5-7 minutes until the sausage is browned and heated through.

  4. Make the Sauce:
    Stir in the tomato purée (or ketchup), paprika, and Dijon mustard (if using). Let it cook for 1-2 minutes, then add the heavy cream and water (or broth). Stir everything together and bring the mixture to a gentle simmer. Let it cook for 5-10 minutes until the sauce thickens to your liking. Taste and adjust seasoning with salt and pepper.

  5. Serve:
    Garnish with chopped parsley (if desired) and serve the korvstroganoff hot with mashed potatoes.


Potatismos (Mashed Potatoes)

Ingredients:

  • 1 kg (2 lbs) potatoes (Yukon Gold or similar)

  • 50g (3 tbsp) butter

  • 1/2 cup milk (or cream for a richer taste)

  • Salt and pepper (to taste)

Instructions:

  1. Boil the Potatoes:
    Peel and chop the potatoes into chunks. Place them in a large pot, cover with water, and bring to a boil. Let them cook for 15-20 minutes until fork-tender.

  2. Mash the Potatoes:
    Drain the potatoes and return them to the pot. Add the butter and a little milk, then mash with a potato masher or use a hand mixer for a smoother texture. Season with salt and pepper to taste.

  3. Adjust Consistency:
    If you like your mashed potatoes creamier, add more milk or cream until you reach your desired consistency.

  4. Serve:
    Serve the mashed potatoes with the korvstroganoff on top, or on the side.


Serving Suggestion:

Korvstroganoff med potatismos is typically served with a dollop of pickled cucumbers or a side of lingonberry sauce to balance out the richness of the dish.
