Ingredients:

1 cup heavy cream (or a mix of cream and milk if you want it lighter)

1/2 cup water (or broth, for a richer flavor)

1 teaspoon paprika (sweet paprika or smoked paprika, depending on your taste)

1 tablespoon Dijon mustard (optional, for tang)

Instructions:

Prepare the Sausage:
Slice the sausages into thin rounds or bite-sized pieces. If you’re using Swedish korv (like falukorv), it’s often already cooked, so just slice it and you’re good to go. -
Sauté the Onions:
In a large skillet, heat the butter or oil over medium heat. Add the chopped onion and sauté until soft and golden, about 3-4 minutes. -
Cook the Sausage:
Add the sliced sausage to the skillet with the onions and cook for 5-7 minutes until the sausage is browned and heated through. -
Make the Sauce:
Stir in the tomato purée (or ketchup), paprika, and Dijon mustard (if using). Let it cook for 1-2 minutes, then add the heavy cream and water (or broth). Stir everything together and bring the mixture to a gentle simmer. Let it cook for 5-10 minutes until the sauce thickens to your liking. Taste and adjust seasoning with salt and pepper. -

Drain the potatoes and return them to the pot. Add the butter and a little milk, then mash with a potato masher or use a hand mixer for a smoother texture. Season with salt and pepper to taste. -
Adjust Consistency:
If you like your mashed potatoes creamier, add more milk or cream until you reach your desired consistency. -

Serve the mashed potatoes with the korvstroganoff on top, or on the side.
