Ingredients:

  • 2 medium zucchinis, grated

  • 1 large egg

  • 1/2 cup almond flour (or coconut flour for a different twist)

  • 1/4 cup grated Parmesan cheese (optional, but adds great flavor)

  • 1/4 tsp garlic powder

  • 1/4 tsp onion powder

  • 1/4 tsp dried oregano (or Italian seasoning)

  • Salt and pepper, to taste

  • 2 tbsp fresh parsley or dill, chopped (optional)

  • 2 tbsp olive oil or avocado oil (for frying)

Instructions:

  1. Prepare the Zucchini:

    • Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This step is important to ensure the fritters aren’t soggy.

  2. Make the Batter:

    • In a large mixing bowl, combine the grated zucchini, egg, almond flour, Parmesan cheese (if using), garlic powder, onion powder, oregano, salt, and pepper. Mix everything together until fully combined. You should have a thick batter-like consistency. If the mixture seems too wet, you can add a bit more almond flour to absorb the moisture.

  3. Fry the Fritters:

    • Heat 1 tablespoon of olive oil or avocado oil in a large skillet over medium heat. Once the oil is hot, scoop about 2 tablespoons of the zucchini mixture into the pan for each fritter. Flatten slightly with the back of the spoon to form a patty.

    • Cook the fritters for 3-4 minutes on each side, or until golden brown and crispy. You may need to adjust the heat to avoid burning the outside while the inside cooks through.

  4. Drain the Fritters:

    • Once cooked, remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil.

  5. Serve:

    • Serve the zucchini fritters warm with a dipping sauce like sour cream, ranch dressing, or tzatziki. Garnish with fresh parsley or dill, if desired.

Tips:

  • To Make It Dairy-Free: Omit the Parmesan cheese and consider adding a little nutritional yeast for flavor.

  • For Extra Crispiness: Make sure to really squeeze out the moisture from the zucchini before mixing, and be sure the oil is hot when frying.

  • Baking Option: If you prefer baking them, place the fritters on a parchment-lined baking sheet and bake at 375°F (190°C) for 20-25 minutes, flipping halfway through for even browning.
