Ingredients:

  • Let the steaks sit at room temperature for 20–30 minutes.

  • Pat dry, then season generously with salt and pepper on both sides.

🔹 2. Sear the steak:

  • Heat a cast-iron skillet over medium-high heat until very hot.

  • Add olive oil and 1 tbsp butter.

  • Sear steaks for 3–4 minutes per side for medium-rare (adjust for thickness and doneness preference).

  • Remove steaks and let them rest on a plate, tented with foil.

  • In the same skillet (don’t wipe it out), lower heat to medium.
