🛒 Ingredients:

For the Steak:
  • 2 ribeye, strip, or sirloin steaks (1–1.5 inches thick)

  • Salt & freshly cracked black pepper

  • 1–2 tbsp olive oil or high-heat cooking oil

  • 2 tbsp butter

  • 2–3 garlic cloves, smashed

  • A few sprigs of fresh thyme or rosemary (optional)

For the Creamy Garlic Sauce:
  • 1 tbsp butter (or use leftover pan drippings)

  • 4 garlic cloves, finely minced

  • ½ cup heavy cream

  • ¼ cup beef broth (or chicken broth)

  • ¼ cup grated Parmesan (optional, for extra richness)

  • Salt & pepper to taste

  • Fresh parsley (for garnish)


🔥 Instructions:

1. Prep the Steaks

  • Pat steaks dry with paper towels.

  • Season generously with salt and pepper on both sides. Let sit at room temp for 15–30 minutes before cooking.

2. Sear the Steaks

  • Heat oil in a cast iron skillet over medium-high heat until very hot.

  • Add steaks and sear for 3–4 minutes per side for medium-rare, adjusting based on thickness.

  • Add butter, smashed garlic, and herbs to the pan. Spoon melted butter over the steaks (basting) for added flavor.

  • Remove steaks and let rest, tented with foil.

3. Make the Creamy Garlic Sauce

  • In the same pan (with some steak drippings), lower heat to medium.

  • Add 1 tbsp butter if needed and sauté minced garlic for 30 seconds until fragrant (don’t burn it).

  • Add beef broth and deglaze the pan, scraping up brown bits.

  • Stir in heavy cream and Parmesan (if using). Simmer for 2–3 minutes until thickened slightly.

  • Season with salt and pepper to taste.

4. Serve

  • Slice the rested steak and spoon creamy garlic sauce over the top.

  • Garnish with fresh chopped parsley.


🍽️ Serving Ideas:

  • Great with mashed potatoes, roasted asparagus, or buttered green beans

  • Also delicious over cauliflower mash for a low-carb option
