-
½ cup mayonnaise

🔪 Instructions:
-
Preheat Oven:
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish. -
Prepare the Base:
Press biscuit dough into the bottom of the dish to form a flat crust. Bake for 8–10 minutes (just until starting to set, not fully cooked). -
Cook the Meat:
In a large skillet, brown the ground beef. Drain fat, add taco seasoning and water, and simmer until thickened (about 5 minutes). -
Sauté Vegetables:
In the same skillet (or separate), cook onions and bell peppers until softened. Add tomatoes (or Rotel) and green chilies if using. Mix into the seasoned beef. -
Mix the Cream Layer:
In a bowl, combine sour cream, mayonnaise, and 1 cup of the shredded cheese. -
Assemble the Casserole:
-
Spread the beef and veggie mixture over the biscuit crust.
-
Spread the sour cream mixture over the top of the beef.
-
Sprinkle remaining 1 cup of cheese over everything.
-
-
Bake:
Bake uncovered for 30–35 minutes, until cheese is bubbly and starting to brown. -
Serve:
Let cool for 5–10 minutes before serving. Garnish with chopped green onions, jalapeños, or cilantro if desired.
🔄 Variations:
-
Spicy: Add sliced jalapeños or hot sauce to the meat mixture.
-
Lower carb: Skip the biscuit crust and bake it as a crustless casserole.
-
Tex-Mex flair: Use pepper jack cheese or add black beans and corn.
