Jerk Lemon Pepper Salmon Recipe

Ingredients:

  • 4 salmon fillets (about 6 oz each, skin on or off, depending on preference)

  • 2 tbsp olive oil

  • 1 tbsp fresh lemon juice (plus more for serving)

  • 1 tbsp lemon zest

  • 1 tsp lemon pepper seasoning

  • 1 tbsp jerk seasoning (store-bought or homemade – recipe below)

  • 1/2 tsp smoked paprika (optional, for added depth)

  • Salt and pepper, to taste

  • Fresh parsley or cilantro for garnish (optional)

For Homemade Jerk Seasoning (optional):

  • 1 tbsp ground allspice

  • 1 tbsp thyme (dried or fresh)

  • 1 tbsp brown sugar

  • 1/2 tsp cinnamon

  • 1/2 tsp nutmeg

  • 1/2 tsp ground ginger

  • 1 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/4 tsp cayenne pepper (adjust to your heat preference)

  • Salt and black pepper, to taste

(Simply mix all of the above ingredients together to make your homemade jerk seasoning.)


Instructions:

1. Prepare the Salmon:

  • Preheat your oven to 400°F (200°C) or heat a grill or grill pan over medium-high heat.

  • Pat the salmon fillets dry with paper towels to remove excess moisture. This helps the seasoning stick better and ensures crispy skin (if using skin-on salmon).

2. Make the Marinade:

  • In a small bowl, combine olive oil, lemon juice, lemon zest, lemon pepper seasoning, jerk seasoning, smoked paprika (if using), salt, and pepper. Stir until well mixed.

3. Coat the Salmon:

  • Rub the marinade generously over both sides of each salmon fillet. If you have time, let the salmon marinate for 15-30 minutes (or up to 2 hours in the fridge) to allow the flavors to soak in. But you can also cook immediately if you’re in a rush!

4. Cook the Salmon:

If Using the Oven:

  • Place the salmon fillets on a baking sheet lined with parchment paper or lightly greased.

  • Bake for 12-15 minutes, or until the salmon flakes easily with a fork. The exact time will depend on the thickness of the fillets, so check after 12 minutes.

If Using the Grill or Grill Pan:

  • Heat the grill or grill pan to medium-high heat and brush it lightly with oil.

  • Place the salmon fillets on the grill, skin-side down (if using skin-on). Grill for 4-5 minutes per side, or until the salmon reaches your desired level of doneness.

5. Serve:

  • Once the salmon is cooked through, remove from the heat. Serve with a squeeze of fresh lemon juice on top and garnish with fresh parsley or cilantro if desired.
