Here’s a hearty and flavorful classic: Italian Sausage with Peppers and Onions — a rustic dish that’s perfect on its own, over pasta, or tucked into a hoagie roll. It’s easy, quick, and packed with bold, savory flavor.


🌭🌶️ Italian Sausage with Peppers and Onions

🔹 Ingredients:

  • 1½ lbs Italian sausage links (sweet, mild, or hot)

  • 1 tbsp olive oil

  • 1 large red bell pepper, sliced

  • 1 large green bell pepper, sliced

  • 1 yellow onion, sliced

  • 2 cloves garlic, minced

  • ½ tsp dried oregano

  • ½ tsp Italian seasoning

  • Salt & pepper to taste

  • Optional: ¼ cup white wine or chicken broth

  • Optional: crushed red pepper flakes (for heat)

  • Fresh basil or parsley for garnish


🔥 Instructions:

1. Cook the Sausage:

  • Heat a large skillet over medium heat. Add sausages and a splash of water; cover and steam for 7–8 minutes to cook through.

  • Remove lid, drain excess water, and brown sausages on all sides (3–5 more minutes). Set aside and slice if desired.


2. Sauté Peppers and Onions:

  • In the same skillet, heat olive oil. Add onions and bell peppers.

  • Cook for about 8–10 minutes, stirring occasionally, until softened and slightly caramelized.

  • Add garlic, oregano, Italian seasoning, salt, pepper, and red pepper flakes if using. Stir for 1 more minute.


3. Combine and Simmer:

  • Return sausages to the pan (whole or sliced).

  • Add wine or broth, reduce heat, and simmer uncovered for 5–7 minutes to blend flavors.


4. Serve:

  • Garnish with fresh herbs.

  • Serve on hoagie rolls, over polenta, rice, or pasta — or enjoy on its own with crusty bread.


🧊 Storage:

  • Refrigerate leftovers up to 4 days. Great for meal prep!
