Ingredients:

For the Dough:

  • 3 1/2 cups all-purpose flour
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 tbsp olive oil (plus more for greasing)
  • 1 1/4 cups warm water (about 110°F/45°C)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 tbsp Italian seasoning (or a mix of dried oregano, basil, thyme, and rosemary)
  • 1/2 tsp garlic powder (optional, for extra flavor)

For the Topping:

  • 1/4 cup shredded mozzarella cheese
  • 1 tbsp grated Parmesan cheese
  • 1/2 tsp Italian seasoning (for sprinkling)
  • 1-2 tbsp melted butter (for brushing, optional)

Directions:

1. Prepare the Dough:

  1. In a large mixing bowl, combine the warm water, sugar, and yeast. Stir gently and let it sit for about 5-10 minutes until it becomes foamy (this activates the yeast).
  2. Add the olive oil, salt, Parmesan cheese, mozzarella cheese, Italian seasoning, and garlic powder (if using). Mix well.
  3. Gradually add the flour, one cup at a time, stirring until a dough starts to form.
  4. Once the dough comes together, turn it out onto a floured surface and knead for about 5-7 minutes, until the dough is smooth and elastic.
  5. Place the dough in a lightly oiled bowl and cover it with a clean kitchen towel. Let it rise in a warm place for 1-1.5 hours, or until it has doubled in size.

2. Shape the Bread:

  1. Once the dough has risen, punch it down to release the air bubbles.
  2. Turn the dough onto a lightly floured surface and shape it into a loaf. You can either form a traditional oblong loaf or roll it into a round ball, depending on your preference.
  3. Place the shaped dough onto a baking sheet lined with parchment paper or into a greased loaf pan.
  4. Cover the dough again with a towel and let it rise for another 30-45 minutes, until it has puffed up.

3. Preheat the Oven:

  1. Preheat your oven to 375°F (190°C) while the dough is finishing its second rise.

  1. Before baking, sprinkle the top of the dough with the additional mozzarella cheese, Parmesan cheese, and Italian seasoning. This will create a cheesy, herby crust once baked.
  2. If you like a golden, buttery finish, brush the top of the dough with a little melted butter before baking.

5. Bake the Bread:

  1. Bake for 25-30 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
  2. If you prefer an extra-crusty top, you can turn on the broiler for the last 2-3 minutes of baking, but keep a close eye on it to avoid burning.
