Here’s a bright, juicy, and Irresistible Peach Summer Cake recipe — light, buttery, and bursting with fresh peach flavor. Perfect for backyard gatherings, potlucks, or a sweet ending to a summer meal. This cake is simple, rustic, and totally delicious!


🍑 Irresistible Peach Summer Cake

Ingredients:

  • 1½ cups all-purpose flour

  • 1 tsp baking powder

  • ¼ tsp baking soda

  • ¼ tsp salt

  • ½ cup (1 stick) unsalted butter, softened

  • ¾ cup granulated sugar (plus extra for sprinkling)

  • 2 large eggs

  • ½ tsp vanilla extract

  • ½ tsp almond extract (optional, but amazing with peaches)

  • ½ cup sour cream or Greek yogurt

  • 2–3 ripe peaches, peeled (optional) and sliced


Instructions:

1. Prep:

  • Preheat oven to 350°F (175°C).

  • Grease and flour a 9-inch round cake pan (or springform pan) and line the bottom with parchment paper.

2. Mix Dry Ingredients:

  • In a bowl, whisk together flour, baking powder, baking soda, and salt.

3. Cream Butter & Sugar:

  • In another bowl, beat the butter and sugar together until light and fluffy (2–3 minutes).

4. Add Eggs & Flavoring:

  • Beat in eggs, one at a time.

  • Mix in vanilla and almond extract.

5. Combine:

  • Add half the flour mixture, then the sour cream, then the remaining flour. Mix just until combined — don’t overmix.

6. Assemble:

  • Spread the batter evenly into the prepared pan.

  • Arrange peach slices in a circular pattern over the top.

  • Sprinkle with 1–2 tablespoons of sugar for a sweet, crackly crust.

7. Bake:

  • Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean and the top is golden.

  • Let cool in the pan for 10 minutes, then transfer to a wire rack.


🍨 Serving Ideas:

  • Serve warm or room temp with a dollop of whipped cream, vanilla ice cream, or a drizzle of honey.

  • Dust with powdered sugar for a simple finish.
