  • 1/4 cup sugar (for the dough)
  • 1/2 tsp salt
  • 2 tbsp vegetable oil (or melted butter)
  • 1/2 cup warm milk

For the Custard Filling:

  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 1 1/4 cups whole milk
  • 1/2 tsp vanilla extract
  • 1 egg, lightly beaten
  • 2 tbsp unsalted butter
  • 1 tbsp vegetable oil (optional, to smooth the filling)

Instructions:

1. Prepare the Dough:

  1. Activate the Yeast: In a small bowl, mix the warm water, 1 tbsp sugar, and yeast. Stir gently and let it sit for 5-10 minutes until it becomes frothy.
  2. Combine Dry Ingredients: In a large bowl, combine the flour, 1/4 cup sugar, and salt.
  3. Mix Wet Ingredients: Add the yeast mixture, warm milk, and vegetable oil to the dry ingredients. Stir until the dough begins to come together.
  4. Knead the Dough: Turn the dough out onto a floured surface and knead for about 8-10 minutes until it becomes smooth and elastic. If it’s too sticky, add a little more flour as needed.
  5. Let the Dough Rise: Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.

2. Prepare the Custard Filling:

  1. Make the Custard: In a saucepan, combine sugar, cornstarch, and milk. Whisk the mixture together and place it over medium heat.
  2. Cook the Mixture: Stir constantly until the mixture thickens and begins to bubble. Reduce the heat, then gradually pour in the lightly beaten egg, whisking continuously to prevent scrambling.
  3. Finish the Custard: Once the custard has thickened to a creamy consistency, remove from the heat. Stir in vanilla extract and butter. If the custard is too thick, you can stir in vegetable oil to smooth it out.
  4. Cool the Custard: Let the custard cool to room temperature before using it as the filling.

3. Assemble the Buns:

  1. Divide the Dough: Punch down the risen dough and divide it into 12 even pieces. Roll each piece into a smooth ball.
  2. Flatten the Dough: Flatten each dough ball into a small disc (about 3 inches in diameter) with a rolling pin.
  3. Fill the Buns: Place about 1 tablespoon of the cooled custard filling in the center of each disc. Carefully fold the edges of the dough over the filling and pinch them together to seal the bun. Ensure the filling is well enclosed.
  4. Prepare for Steaming: Place each bun on a small square of parchment paper to prevent them from sticking to the steamer. Arrange the buns in the steamer, leaving a bit of space between each bun to allow them to expand while steaming.

4. Steam the Buns:

  1. Steam the Buns: Fill a large steamer pot with water and bring it to a gentle simmer. Place the buns in the steamer basket, ensuring that they’re not touching each other. Cover and steam over medium-high heat for 10-12 minutes, or until the buns are puffed and cooked through.
  2. Check for Doneness: Carefully remove the lid and check if the buns are fully cooked. They should be soft and fluffy, and the custard inside should be smooth and creamy.

5. Serve:

  • Once the buns are done, remove them from the steamer and let them cool for a few minutes before serving. Enjoy them warm for the best texture!
