Here’s a rich and indulgent Chocolate Ganache Torte recipe that’s perfect for special occasions — or whenever you need a truly decadent dessert.


🍫 Indulgent Chocolate Ganache Torte

Servings: 10–12 slices

Bake Time: 25–30 minutes

Chill Time: 4+ hours (overnight preferred)


📝 Ingredients

For the Torte Base (Flourless Chocolate Cake):

  • 200g (7 oz) dark chocolate (70% cocoa), chopped

  • 150g (2/3 cup) unsalted butter, cubed

  • 150g (3/4 cup) granulated sugar

  • 1 tsp pure vanilla extract

  • 4 large eggs, at room temperature

  • 1/4 tsp salt

  • Optional: 1 tbsp espresso or strong coffee (enhances chocolate flavor)

For the Ganache Topping:

  • 200g (7 oz) dark chocolate (60–70% cocoa), finely chopped

  • 200ml (3/4 cup + 1 tbsp) heavy cream

  • 1 tbsp unsalted butter (for shine)

  • Optional: 1–2 tbsp liqueur (e.g., Grand Marnier, Chambord, or Baileys)


🧑‍🍳 Instructions

1. Make the Flourless Cake Base:

  1. Preheat your oven to 175°C / 350°F.

  2. Grease and line the base of a 20 cm (8-inch) springform pan with parchment paper.

  3. In a heatproof bowl over a saucepan of simmering water (double boiler), melt the dark chocolate and butter together. Stir until smooth.

  4. Remove from heat. Stir in the sugar, vanilla, and espresso if using.

  5. Add eggs one at a time, whisking well after each addition.

  6. Add salt, and mix until smooth and glossy.

  7. Pour batter into the prepared pan and smooth the top.

  8. Bake for 25–30 minutes, or until the center is just set but still has a slight jiggle.

  9. Cool in the pan for 10 minutes, then run a knife around the edge. Let cool completely.


2. Make the Ganache Topping:

  1. Heat the cream in a small saucepan over medium heat until just simmering — don’t boil.

  2. Pour hot cream over the chopped chocolate in a bowl. Let sit for 1–2 minutes.

  3. Add butter (and liqueur if using), then stir gently until smooth and glossy.

  4. Let ganache cool slightly (it should still be pourable but not too hot).

  5. Pour over the cooled torte and spread evenly.

  6. Refrigerate for at least 4 hours, preferably overnight, to set.


✨ Serving & Garnishing Ideas

  • Sprinkle with sea salt flakes for contrast

  • Decorate with fresh raspberries, chocolate curls, or edible gold leaf

  • Serve with whipped cream or a dollop of crème fraîche

  • Pair with espresso or dessert wine


🧊 Storage

  • Store in the refrigerator for up to 5 days, covered.

  • Can be frozen (without toppings) for up to 1 month — thaw overnight in the fridge.
