Here’s a tried-and-true recipe for Hungarian Crêpes (Palacsinta) — delicate, thin pancakes that are typically rolled and filled with sweet or savory fillings. These are a staple of Hungarian kitchens and are as versatile as they are delicious.


🥞 Hungarian Crêpes (Palacsinta)

🧂 Basic Batter Ingredients (Makes ~12-15 crêpes)

  • 1 cup (125g) all-purpose flour

  • 1 ¼ cups (300ml) milk

  • 2 eggs

  • 1/4 cup (60ml) sparkling water or plain water

  • 1 tbsp sugar (optional, for sweet version)

  • 1 pinch of salt

  • 1 tsp vanilla extract (optional)

  • Zest of 1 lemon (optional but traditional in sweet versions)

  • 2 tbsp melted butter or neutral oil (plus more for frying)


🍳 Instructions

1. Make the Batter

  • In a large bowl, whisk eggs and milk together.

  • Add flour gradually, whisking until smooth and lump-free.

  • Stir in salt, sugar (if using), vanilla, lemon zest, and finally the sparkling water and melted butter.

  • Let the batter rest for 20–30 minutes (important for smooth texture).

2. Cook the Crêpes

  • Heat a non-stick or lightly greased skillet over medium heat.

  • Pour about 1/4 cup batter into the pan, swirling to coat the bottom in a thin layer.

  • Cook 1–2 minutes until edges start to lift, then flip and cook another 30–60 seconds.

  • Stack finished crêpes on a plate, covering with foil or a clean towel to keep warm.


🧁 Sweet Filling Ideas

  1. Jam (Traditional): Apricot, plum, or raspberry jam — roll and dust with powdered sugar.

  2. Sweetened Cottage Cheese:

    • 1 cup cottage cheese or farmer’s cheese

    • 1 tbsp sugar, splash of vanilla, lemon zest

    • Optional: raisins or chopped dried fruit

  3. Nut Filling (Diós Palacsinta):

    • Finely ground walnuts mixed with powdered sugar and a touch of warm milk or rum

  4. Poppy Seed Filling (Mákos Palacsinta):

    • Ground poppy seeds with powdered sugar and a bit of milk or honey

  5. Nutella or Chocolate Sauce for a modern twist


🧀 Savory Filling Ideas

  • Ham & Cheese (warm to melt inside)

  • Sautéed mushrooms with sour cream and herbs

  • Spinach and feta


🍽️ Serving

  • Roll them up like cigars or fold into quarters.

  • Dust with powdered sugar or drizzle with chocolate sauce for sweet versions.
