  • 8 oz feta cheese, cut into 1-inch cubes (block feta in brine is best)

  • 3/4 to 1 cup extra virgin olive oil

  • 2โ€“3 cloves garlic, thinly sliced

  • 1โ€“2 tsp crushed red pepper flakes (optional for heat)

  • 1 tsp whole black peppercorns

  • 1 tsp dried oregano (or use fresh sprigs)

  • 2โ€“3 sprigs fresh thyme or rosemary

  • Zest of 1 lemon (plus a few strips of peel)

  • Optional: olives, sun-dried tomatoes, or chili slices for added flavor layers

  1. Prep the Feta:

    • Pat feta cubes dry with paper towels. Moisture can cause spoilage or dilute the oil.

  2. Layer Flavors:

    • In a clean glass jar or airtight container, add a layer of feta cubes.

    • Sprinkle in some of the garlic, herbs, lemon zest, and spices.

    • Continue layering until all the feta and flavorings are used.

  3. Add Olive Oil:

    • Pour olive oil over the feta until fully submerged. Gently tap the jar to remove air bubbles.

  4. Marinate:

    • Seal the jar and refrigerate for at least 24 hours. Flavor intensifies after 2โ€“3 days.

  5. Serve:

    • Bring to room temperature before serving (olive oil solidifies in the fridge).

    • Serve with crusty bread, crackers, salads, or roasted veggies.
