🍯🐔 Honey Mustard Chicken with Roasted Asparagus and Cheese

🔹 Ingredients:

For the chicken:

  • 2–4 boneless, skinless chicken breasts or thighs

  • 2 tbsp Dijon mustard

  • 1 tbsp whole grain mustard (optional, for texture)

  • 2 tbsp honey

  • 1 tbsp olive oil

  • 1 tsp garlic powder

  • Salt & pepper to taste

  • ½ tsp smoked paprika (optional)

For the roasted asparagus:

  • 1 bunch fresh asparagus, trimmed

  • 1 tbsp olive oil

  • Salt & pepper to taste

  • ½ cup shredded mozzarella, Parmesan, or Gruyère cheese


🔥 Instructions:

1. Preheat oven to 400°F (200°C).


2. Marinate the Chicken:

  • In a small bowl, mix Dijon mustard, whole grain mustard, honey, olive oil, garlic powder, salt, pepper, and paprika.

  • Coat chicken breasts in the mixture and let marinate for 15–30 minutes (or overnight for more flavor).


3. Cook the Chicken:

  • In a skillet over medium heat, sear chicken 2–3 minutes per side until lightly browned.

  • Transfer to a baking dish and pour remaining marinade over the top.

  • Bake in the oven for 20–25 minutes, or until internal temp reaches 165°F (74°C).


4. Roast the Asparagus:

  • While chicken bakes, place trimmed asparagus on a sheet pan.

  • Drizzle with olive oil, season with salt and pepper, and toss to coat.

  • Roast in the oven for 10–12 minutes, until tender but still crisp.

  • In the last 2–3 minutes, sprinkle with cheese and return to the oven to melt.


5. Serve:

  • Plate the honey mustard chicken with a side of cheesy roasted asparagus.

  • Spoon extra sauce from the baking dish over the chicken if desired.


🧀 Optional Additions:

  • Add sliced mushrooms or cherry tomatoes to the asparagus tray.

  • Top the chicken with a bit of extra shredded cheese in the last 5 minutes of baking for a melt-in-your-mouth finish.
