Absolutely! 🫙❤️ Homemade Pickled Beets are a classic sweet-tangy treat that’s surprisingly easy to make and endlessly versatile — perfect on salads, sandwiches, cheese boards, or just straight from the jar. This recipe gives you tender beets in a vinegar brine with a touch of sugar and spice.


🥄 Homemade Pickled Beets Recipe (Refrigerator or Canned)

🛒 Ingredients:

For the beets:

  • 2 pounds fresh beets (about 4–6 medium)

  • Water, for boiling

  • Optional: gloves (beets stain!)

For the pickling brine:

  • 1 cup apple cider vinegar (or white vinegar)

  • 1 cup water

  • ½–¾ cup granulated sugar (adjust to taste)

  • 1½ tsp salt

  • ½ tsp black peppercorns

  • ½ tsp mustard seeds

  • 2–3 whole cloves (optional, for a subtle warm spice)

  • 1 small cinnamon stick (optional)

  • 1–2 bay leaves


🧑‍🍳 Instructions:

1. Cook the beets:

  • Trim off beet greens (save them for sautéing later!)

  • Rinse beets and place in a large pot. Cover with water.

  • Bring to a boil and simmer for 30–45 minutes, or until fork-tender.

  • Drain and let cool slightly.

  • Peel beets (skins should rub off easily once cooked). Slice or cut into wedges.

2. Make the brine:

  • In a medium saucepan, combine vinegar, water, sugar, salt, and spices.

  • Bring to a boil, stirring to dissolve sugar and salt.

  • Simmer for 5 minutes, then remove from heat.

3. Pack the jars:

  • Place sliced beets into clean jars (pint or quart size).

  • Pour hot brine over beets, making sure they’re fully covered.

  • Let cool to room temp, then cover tightly.

4. Refrigerator method:

  • Store in the refrigerator. Wait at least 24–48 hours before eating for best flavor.

  • Keeps well for 3–4 weeks refrigerated.


🔥 Want to can them for long-term storage?

  • Use sterilized canning jars.

  • Fill with hot beets and hot brine, leaving ½” headspace.

  • Wipe rims, apply lids, and process in a boiling water bath for 30 minutes (for pint jars).

  • Store in a cool, dark place for up to 1 year.


🧂 Flavor Variations:

  • Add thinly sliced red onions or pearl onions to the jars.

  • Use balsamic vinegar for a deeper, richer flavor.

  • Add fresh dill or rosemary for an herbal twist.

  • For a spicy version, add chili flakes or a sliced jalapeño.
