Here’s a nostalgic and delicious recipe for Homemade Oatmeal Cream Pies β€” soft, chewy oatmeal cookies sandwiched with fluffy vanilla cream filling. Just like the classic Little Debbie version, but better!

🍽️ Makes: About 10–12 sandwich cookies


πŸͺ For the Oatmeal Cookies:

Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened

  • 3/4 cup brown sugar, packed

  • 1/2 cup granulated sugar

  • 1 tbsp molasses

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1 1/2 cups all-purpose flour

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1 tsp cinnamon

  • 1/8 tsp ground cloves (optional, for depth)

  • 2 cups old-fashioned oats (not quick oats)

Instructions:

  1. Preheat oven to 350Β°F (175Β°C). Line baking sheets with parchment paper.

  2. In a large bowl, cream together butter, brown sugar, granulated sugar, and molasses until light and fluffy.

  3. Beat in eggs and vanilla.

  4. In a separate bowl, whisk together flour, baking soda, salt, cinnamon, and cloves.

  5. Gradually mix dry ingredients into the wet ingredients. Stir in oats.

  6. Scoop dough (about 1.5 tbsp per cookie) onto prepared sheets, spacing a couple inches apart. Flatten slightly with your fingers or the bottom of a glass.

  7. Bake 10–12 minutes, until edges are golden but centers still look soft. Let cool on the pan 5 minutes, then transfer to a wire rack to cool completely.


🧁 For the Cream Filling:

Ingredients:

  • 1/2 cup (1 stick) unsalted butter, softened

  • 1/2 cup vegetable shortening (for that classic fluffiness)

  • 1 1/2 cups powdered sugar

  • 1 tsp vanilla extract

  • 1 tbsp milk or cream (more if needed for consistency)

Instructions:

  1. In a mixing bowl, beat butter and shortening together until smooth and fluffy.

  2. Add in powdered sugar, vanilla, and milk. Beat until light and creamy. Adjust texture with more sugar or milk if needed.


🧩 Assemble:

  • Pair cooled cookies by size.

  • Pipe or spread cream filling onto the flat side of one cookie, then top with another to make a sandwich.

  • Gently press together. Let set for 10–15 minutes before serving for best texture.

  • Store in an airtight container at room temp for 2–3 days, or in the fridge for up to a week (they’re amazing chilled!).
