Homemade Meatloaf

Here’s a classic homemade meatloaf recipe — juicy, flavorful, and topped with a tangy ketchup glaze. Perfect for a cozy dinner with mashed potatoes or roasted veggies.

🧂 Ingredients

For the Meatloaf:

  • 2 lbs ground beef (80/20 for best flavor)

  • 1 cup breadcrumbs (plain or Italian)

  • 2 eggs

  • 1/2 cup milk

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 2 tbsp Worcestershire sauce

  • 2 tsp salt

  • 1/2 tsp black pepper

  • 1 tsp dried thyme or parsley (optional)

For the Glaze:

  • 1/2 cup ketchup

  • 2 tbsp brown sugar

  • 1 tbsp mustard (yellow or Dijon)

  • 1 tbsp apple cider vinegar (optional for tang)


👩‍🍳 Instructions

  1. Preheat Oven:
    Set to 375°F (190°C). Line a baking sheet with foil or parchment, or use a loaf pan.

  2. Mix Meatloaf:
    In a large bowl, combine:

    • Ground beef

    • Breadcrumbs

    • Eggs

    • Milk

    • Onion

    • Garlic

    • Worcestershire sauce

    • Salt, pepper, herbs

    Gently mix with your hands or a spoon until just combined. Don’t overmix.

  3. Shape or Pan It:

    • Shape into a loaf on a baking sheet (better crust), or

    • Press into a greased loaf pan.

  4. Make Glaze & Top:
    In a small bowl, mix ketchup, brown sugar, mustard, and vinegar. Spread half on the meatloaf before baking.

  5. Bake:

    • Bake uncovered for 50–60 minutes, or until internal temp hits 160°F (71°C).

    • Add remaining glaze in last 15 minutes.

  6. Rest & Serve:
    Let meatloaf rest for 10 minutes before slicing. This helps juices settle.


🥔 Serve With:

  • Mashed potatoes & gravy

  • Green beans or roasted carrots

  • Mac and cheese

  • Cornbread or rolls
