Homemade Meatloaf
Ingredients:
For the Meatloaf:

2 lbs (900g) ground beef (80/20 for best moisture)

1 cup breadcrumbs (plain or Italian-style)

1/2 cup whole milk

2 large eggs
-
1 small onion, finely chopped
-
2 cloves garlic, minced
-
2 tbsp ketchup
-
1 tbsp Worcestershire sauce
-
1 tsp salt
-
1/2 tsp black pepper
-
Optional: 1/2 tsp dried thyme or parsley
For the Glaze:

1/2 cup ketchup
-
2 tbsp brown sugar
-
1 tbsp Dijon or yellow mustard

1 tbsp apple cider vinegar (optional, for tang)
Instructions:

Preheat Oven:

Set oven to 350°F (175°C). Line a baking sheet with parchment or foil, or use a loaf pan.

Soak the breadcrumbs:

In a large bowl, combine breadcrumbs and milk. Let sit 5 minutes to soften.

Mix the meatloaf:

Add ground beef, eggs, onion, garlic, ketchup, Worcestershire, salt, pepper, and optional herbs to the breadcrumb mixture.

Mix until just combined—don’t overwork it.

Shape and bake:

Form into a loaf shape on a lined baking sheet, or press into a loaf pan.

Bake for 40 minutes.

Add the glaze:

While baking, mix glaze ingredients in a bowl.

After 40 minutes, remove meatloaf from oven and spread glaze over the top.

Return to oven and bake for another 15–20 minutes, or until internal temp reaches 160°F (71°C).

Rest and serve:

Let meatloaf rest 10 minutes before slicing.

Tips:

Swap 1/2 lb of ground beef for ground pork or turkey for extra flavor.

Leftovers make great sandwiches the next day.

For a firmer loaf, let it cool slightly before slicing.
