Homemade Mango Carlota

A Homemade Mango Carlota (also known as “Carlota de Mango”) is a delicious and easy no-bake Mexican dessert, similar to an icebox cake. It layers sweet mango cream with Maria cookies and is chilled until set. Here’s a classic recipe:


Homemade Mango Carlota Recipe

Ingredients:

  • 2 large ripe mangoes (or ~2 cups of mango pulp)

  • 1 can (14 oz) sweetened condensed milk

  • 1 can (12 oz) evaporated milk

  • 1 package (190g) Maria cookies (or any plain tea biscuits)

  • Juice of 1 lime (optional, enhances flavor)

  • A pinch of salt

  • Mango slices or whipped cream for garnish (optional)

Instructions:

  1. Prepare the Mango Cream:

    • In a blender, combine the mango pulp, condensed milk, evaporated milk, lime juice, and a pinch of salt.

    • Blend until smooth and creamy.

  2. Assemble the Carlota:

    • In a rectangular or round dish (glass works best to see the layers), spread a thin layer of mango cream on the bottom.

    • Add a layer of Maria cookies over the cream (you can break them to fit the dish if needed).

    • Add another layer of mango cream on top of the cookies, spreading evenly.

    • Repeat the process: cookies, mango cream, until all ingredients are used, finishing with a thick layer of mango cream on top.

  3. Chill:

    • Cover and refrigerate for at least 4 hours, preferably overnight, to allow it to set and for the cookies to soften.

  4. Serve:

    • Garnish with mango slices, crushed cookies, or whipped cream if desired.

    • Slice and serve cold.
