Making Homemade Clotted Cream is surprisingly easy, and it’s a delicious treat to spread on scones or serve with fresh fruit or pastries. Here’s a simple recipe for you:

Homemade Clotted Cream Recipe

Ingredients:

  • 2 cups heavy cream (the higher the fat content, the better—look for cream with 36% fat or more)
  • 2 tablespoons whole milk (optional, to help with consistency)

Instructions:

  1. Preheat the oven: Preheat your oven to 180°F (82°C). This is a low and slow heat, perfect for making clotted cream.
  2. Pour the cream into a dish: Pour the heavy cream into an oven-safe dish, like a shallow baking dish or pie plate. The cream should be about 1-2 inches deep.
  3. Bake the cream: Place the dish in the oven on the middle rack. Let the cream bake for 12 hours (overnight is ideal), uncovered. This allows the cream to slowly thicken and form the characteristic clots on top.
  4. Cool the cream: After 12 hours, remove the dish from the oven and let it cool to room temperature for about an hour.
  5. Refrigerate: Once the cream has cooled, cover the dish with plastic wrap or a lid and place it in the refrigerator. Let it chill for at least 4 hours (or overnight) to allow the clotted cream to set fully.
  6. Scoop the clotted cream: After chilling, you’ll see a thick layer of clotted cream on top. Gently scoop the clotted cream from the top and transfer it to a bowl. You can discard or reserve the thin liquid beneath (this is known as “whey,” and can be used in baking or smoothies).
  7. Serve: Your homemade clotted cream is ready to serve! Spread it on warm scones, muffins, or enjoy it with fruit, jams, or pastries.

Tips:

  • Storage: Homemade clotted cream can be stored in the fridge for about 4-5 days. If you have leftover whey, it can also be stored and used in cooking.
  • Milk option: Some recipes call for a small amount of milk to add richness and creaminess, but it’s optional. The heavy cream alone will give you plenty of delicious clotted cream.
  • Non-dairy version: If you’re looking for a dairy-free option, it’s tricky, as clotted cream relies on the high-fat content of cream. However, you can experiment with coconut cream for a similar richness and texture.
