Here’s a tasty and easy recipe for High-Protein Sausage Egg Muffins—perfect for meal prep, on-the-go breakfasts, or post-workout snacks.


🧁 High-Protein Sausage Egg Muffins

Servings: 12 muffins
Prep Time: 10 mins
Cook Time: 20-25 mins
Protein per muffin: ~10-12g (varies by ingredients)


🥚 Ingredients:

  • 10 large eggs

  • 1 cup cooked ground sausage (pork, turkey, or chicken sausage)

  • 1/2 cup shredded cheddar cheese (or any cheese you like)

  • 1/2 cup chopped bell peppers (red, green, or yellow)

  • 1/4 cup chopped onions

  • 1/4 cup chopped spinach or kale (optional)

  • Salt and pepper to taste

  • Olive oil spray or muffin liners


🔪 Instructions:

  1. Preheat oven to 375°F (190°C). Spray a 12-cup muffin tin with oil or use silicone liners.

  2. Cook the sausage in a skillet over medium heat until browned and fully cooked. Drain any excess fat.

  3. In a large bowl, whisk the eggs. Add salt, pepper, and other seasonings if desired.

  4. Add the cooked sausage, cheese, peppers, onions, and spinach to the eggs. Stir to combine.

  5. Pour mixture evenly into the muffin tin cups, filling each about 3/4 full.

  6. Bake for 20–25 minutes, or until the centers are set and tops are golden.

  7. Let cool for a few minutes before removing. Store in the fridge for up to 5 days or freeze for up to 2 months.


🔄 Variations:

  • Keto version: Skip the veggies or reduce them and add more meat and cheese.

  • Spicy: Use hot sausage or add jalapeños and chili flakes.

  • Dairy-free: Use a dairy-free cheese alternative or omit cheese.
