Healthy Egg Salad

A healthy egg salad can be both nutritious and satisfying, without sacrificing flavor! Here’s a simple recipe for a healthier take on the classic egg salad:

Healthy Egg Salad

Ingredients:

  • 6 large eggs, hard-boiled
  • 1/4 cup Greek yogurt (plain, non-fat or low-fat)
  • 1-2 tbsp Dijon mustard
  • 1-2 tbsp lemon juice (freshly squeezed)
  • 1 tbsp olive oil (optional, for extra richness)
  • 1 small celery stalk, finely chopped
  • 2 tbsp red onion, finely chopped (optional)
  • 1 tbsp fresh dill, chopped (or 1 tsp dried dill)
  • Salt and pepper to taste
  • A pinch of paprika (optional, for garnish)

Instructions:

  1. Prepare the eggs:
    • Place the eggs in a pot, cover them with water, and bring to a boil over medium heat. Once the water starts boiling, cover the pot, remove it from the heat, and let the eggs sit for about 12 minutes. Afterward, transfer the eggs to a bowl of ice water to cool before peeling them.
  2. Make the egg salad base:
    • Once the eggs are peeled, chop them into bite-sized pieces and place them in a large bowl.
  3. Mix the dressing:
    • In a small bowl, combine the Greek yogurt, Dijon mustard, lemon juice, olive oil (if using), salt, and pepper. Stir until smooth.
  4. Assemble the salad:
    • Add the chopped celery, onion (if using), and fresh dill to the eggs. Pour the dressing over the mixture and gently stir everything together until well combined. Adjust seasoning with more salt, pepper, or lemon juice, if needed.
  5. Serve:
    • You can serve this healthy egg salad as-is, or use it as a filling for whole grain sandwiches, wraps, or lettuce wraps for a lighter option. Garnish with a sprinkle of paprika if desired.

Optional add-ins for extra crunch and flavor:

  • Chopped pickles or relish for a tangy twist
  • Avocado for added creaminess and healthy fats
  • A handful of chopped fresh herbs like parsley or chives

This version keeps things light by replacing mayo with Greek yogurt, which adds a nice creaminess along with a boost of protein and probiotics. You still get all the classic flavor of egg salad, but in a healthier form!
