🥞 HEALTHY & BUDGET-FRIENDLY SAVORY PANCAKES
Ingredients (makes ~8 pancakes):

1 cup whole wheat flour (or all-purpose)

½ tsp black pepper

1 tsp garlic powder (optional)

1 tsp dried herbs (like oregano, parsley, or thyme)
Wet ingredients:

1 large egg

¾ cup milk (dairy or plant-based)

1 tbsp oil (olive or vegetable)

1 cup finely chopped or grated veggies (carrot, zucchini, spinach, onion, bell pepper, etc.)

Optional: 2 tbsp grated cheese (like cheddar or Parmesan)

Prep veggies: If using watery veggies like zucchini, squeeze out excess moisture with a paper towel.

In a large bowl, whisk together flour, baking powder, salt, pepper, garlic powder, and herbs.

In another bowl, whisk egg, milk, and oil.

Pour wet ingredients into dry, then fold in veggies (and cheese, if using). Batter should be thick but spoonable — add a splash more milk if too thick.

Heat a nonstick skillet or griddle over medium heat and lightly oil it.

Drop ¼ cup of batter for each pancake. Flatten slightly. Cook 2–3 minutes per side, or until golden and cooked through.
