Here’s a Healthy and Budget-Friendly Savory Pancakes recipe — perfect for breakfast, lunch, or a light dinner. Packed with veggies, made with simple pantry staples, and easy to customize!


🥞 HEALTHY & BUDGET-FRIENDLY SAVORY PANCAKES

Ingredients (makes ~8 pancakes):

  • 1 cup whole wheat flour (or all-purpose)

  • 1 tsp baking powder

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 tsp garlic powder (optional)

  • 1 tsp dried herbs (like oregano, parsley, or thyme)

Wet ingredients:

  • 1 large egg

  • ¾ cup milk (dairy or plant-based)

  • 1 tbsp oil (olive or vegetable)

  • 1 cup finely chopped or grated veggies (carrot, zucchini, spinach, onion, bell pepper, etc.)

  • Optional: 2 tbsp grated cheese (like cheddar or Parmesan)


🔪 Instructions:

  1. Prep veggies: If using watery veggies like zucchini, squeeze out excess moisture with a paper towel.

  2. In a large bowl, whisk together flour, baking powder, salt, pepper, garlic powder, and herbs.

  3. In another bowl, whisk egg, milk, and oil.

  4. Pour wet ingredients into dry, then fold in veggies (and cheese, if using). Batter should be thick but spoonable — add a splash more milk if too thick.

  5. Heat a nonstick skillet or griddle over medium heat and lightly oil it.

  6. Drop ¼ cup of batter for each pancake. Flatten slightly. Cook 2–3 minutes per side, or until golden and cooked through.

  7. Serve warm with plain yogurt, sour cream, salsa, or a fried egg on top.


💡 Tips & Variations:

  • Use leftovers: chopped spinach, corn, peas, or even leftover cooked veggies.

  • Make them spicy with chopped green chilies or a dash of hot sauce.

  • Want protein? Add canned tuna, shredded chicken, or a handful of chickpeas to the batter.
