  • 1 container (8 oz) whipped topping (such as Cool Whip)
  • 1/2 cup shredded sweetened coconut
  • 1/2 cup miniature marshmallows
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Optional Toppings:

  • Additional shredded coconut (toasted, for garnish)
  • Maraschino cherries (for garnish)

Instructions:

1. Prepare the Cream Cheese Mixture:

  • In a large mixing bowl, beat the cream cheese and powdered sugar together until smooth and creamy, using an electric mixer or a whisk.
  • Add the vanilla extract and mix to combine.

2. Add the Pineapple and Coconut:

  • Gently fold in the drained crushed pineapple (be sure to drain the pineapple well to prevent the mixture from becoming too watery).
  • Stir in the shredded coconut and miniature marshmallows until evenly distributed.

3. Add the Whipped Topping:

  • Carefully fold in the whipped topping (Cool Whip) into the mixture until it’s fully incorporated and fluffy.

4. Chill:
