Hawaiian Chicken Sheet Pan

Ingredients:

  • 4 bone-in, skinless chicken breasts or thighs (you can use boneless too)
  • 1 cup pineapple chunks (fresh or canned, drained if using canned)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 2 tbsp honey or brown sugar
  • 1 tsp garlic powder
  • 1 tsp ground ginger
  • 1/2 tsp crushed red pepper flakes (optional, for a little kick)
  • Salt and pepper to taste
  • Fresh cilantro or parsley (for garnish)
  • Cooked rice (for serving, optional)

Directions:

  1. Preheat your oven: Preheat your oven to 400°F (200°C) and line a sheet pan with parchment paper or lightly grease it with cooking spray.
  2. Prepare the chicken:
    • In a small bowl, mix together the olive oil, soy sauce, honey (or brown sugar), garlic powder, ginger, and red pepper flakes (if using). Stir until well combined.
    • Season the chicken with salt and pepper, then coat it in the sauce mixture. You can marinate the chicken for about 15-30 minutes for extra flavor, but it’s not essential if you’re in a hurry.
  3. Prepare the veggies:
    • On the sheet pan, spread out the sliced bell peppers, onion, and pineapple chunks. Drizzle with a little bit of olive oil and season with salt and pepper.
  4. Arrange the chicken on the pan:
    • Place the chicken pieces on top of the veggies and pineapple. Pour any remaining sauce over the chicken and veggies.
  5. Roast:
    • Bake everything in the preheated oven for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and is golden brown. You can give the veggies a quick toss halfway through to ensure they roast evenly.
  6. Serve:
    • Once the chicken is done, remove from the oven and let it rest for a few minutes. Serve the chicken and veggies with a side of rice for a complete meal. Garnish with fresh cilantro or parsley for a nice pop of color and freshness.

Optional Add-ins/Variations:

  • Add some heat: If you like a little spice, add some jalapeño slices or drizzle a bit of sriracha over the chicken before serving.
  • Other veggies: You can add zucchini, sweet potatoes, or snap peas for extra variety.
  • Coconut: For even more of a tropical flair, sprinkle shredded coconut over the veggies or chicken before baking.
