🍍 Hawaiian Beef with Pineapple

🍽️ Servings: 4

⏱️ Total Time: 30–40 minutes

Perfect for a quick weeknight dinner or meal prep!

πŸ₯˜ Ingredients:

For the Stir Fry:

  • 1 lb flank steak or sirloin, thinly sliced against the grain

  • 1 tablespoon cornstarch (or arrowroot for gluten-free)

  • 1 tablespoon soy sauce (or tamari/coconut aminos for GF)

  • 1 tablespoon vegetable or sesame oil

  • 1 red bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 small onion, sliced

  • 1 cup pineapple chunks (fresh or canned, drained if canned)

  • 2 green onions, sliced (for garnish)

  • Sesame seeds (optional garnish)

For the Hawaiian Sauce:

  • 1/3 cup soy sauce

  • 1/3 cup pineapple juice (reserved from can or fresh)

  • 2 tablespoons brown sugar (or low-carb sweetener)

  • 1 tablespoon rice vinegar or apple cider vinegar

  • 2 teaspoons grated fresh ginger

  • 2 cloves garlic, minced

  • 1 teaspoon cornstarch + 1 tablespoon water (slurry to thicken)

πŸ”ͺ Instructions:

1. Prep the beef

  • In a bowl, toss sliced beef with 1 tbsp soy sauce and 1 tbsp cornstarch. Let sit for 10–15 minutes while prepping other ingredients.

2. Make the sauce

  • In a small bowl, mix: soy sauce, pineapple juice, brown sugar, vinegar, ginger, and garlic. Set aside.

3. Sear the beef

  • Heat oil in a large skillet or wok over medium-high heat.

  • Sear the beef in batches (don’t overcrowd) for 1–2 minutes per side until browned. Remove and set aside.

4. Stir-fry the veggies

  • In the same pan, add a bit more oil if needed. Stir-fry bell peppers and onion for 3–4 minutes until just tender.

5. Add pineapple + sauce

  • Add pineapple chunks and return the beef to the pan.

  • Pour in the Hawaiian sauce and stir to coat everything.

  • Bring to a simmer, then add the cornstarch slurry (1 tsp cornstarch mixed with 1 tbsp water).

  • Cook 1–2 minutes until the sauce thickens slightly.

6. Finish & serve

  • Garnish with green onions and sesame seeds.

  • Serve over steamed rice, cauliflower rice (for low-carb), or noodles.

πŸ”„ Variations & Tips:

  • Add snap peas, broccoli, or baby corn for more veggies.

  • Want a little heat? Add a pinch of red pepper flakes or a dash of sriracha.

  • Use ground beef as a budget-friendly alternative β€” just brown it first and continue as above.
